Healthy Banana Bread Muffins

BANANA BREAD MUFFINS


This morning I had the idea to make banana bread but make a healthier version.  They turned out delicious and not overly sweet.  Definitely don't need to feel guilty eating these babies.
ENJOY!


INGREDIENTS
3 or 4 ripe bananas, smashed
1/3 cup soften salted butter
1/2 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 cups of all-purpose flour

METHOD
Preheat the oven to 350°F (175°C). Smash bananas in a smsll mixing bowl with a fork. Mix butter and mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda over the mixture and mix in. Add the flour last, mix. Pour mixture into a happy cupcake liners or a loaf pan. Bake for 20-25 minutes in muffin tin or 50 minutes- 1 hour for loaf pan.  Remove from oven and enjoy with a little bit of butter or without.
Yield: Makes 12 muffins or one loaf.
